Cooking is my art expression and ingredients are my muse

Nearly three weeks ago now, I took a cooking class. It’s totally my thing and I try my best to take a cooking class in every country I visit.  So naturally I sought out a cooking class to take in Colombia.

The best thing about the cooking classes in foreign countries is that you get to know some local ingredients, but ultimately I take them for the recipes. I am an avid home cook and I truly enjoy being in the kitchen, it is for sure my happy place.

The best cooking class I have ever taken (including in my home country Canada) was by far, hands down a class I took in Budapest, Hungary…but that’s another story.

In Colombia, I took a class by a company called Sky Kitchen and then did not disappoint.

The kitchen space for the class was beautiful and clean. It had the coolest sink and the courtyard setting with the open ceiling was set up with a family style table to enjoy the fruits of our labour.

The instructor’s name was Romario and he and his assistant were incredibly friendly, funny and engaging the entire class. Typically cooking classes are full of students eager to learn the local delicacies and pick up a few new techniques, but this class was just for two.

I want to say that the best part of the class was dessert but the truth is that ALL the food was excellent.  I am allergic to bananas and plantains so I was able to make an alternative with Yucca instead of the typical Colombia Patacones.  Basically it was just cooked yucca, grated up with a little salt and oil…rolled into log shapes and stuff with any kind of filling you want, then deep fried and they were so simple yet super sophisticated.

Just goes to show….keeping it simple truly does go a long way. I can’t wait to recreate these recipes and put a little Jackelyn spin on them. It was worth it
